You might find ur answer in Newton is Third Law. For every action there is an equal & opposite reaction. So when u push down on the pedal, some of the down force is also redirected up causing u to lift slightly off the seat. That is why people on bicycles look like they r going slightly up & down as they pedal. If u firmly grip the handlebars, u will generally create a more solid form & less of the downforce will be lost.

Because pulling on the handlebars adds more downward force to the pedals than ur legs alone can produce. You're helping ur legs out that way; think of pushing a door (that someone is blocking from the other side) with just ur arms versus leaning & using ur arms & legs
